Food and wine pairing : Its airy side leads us to propose it without delay on white meats, sweet spices, but it will also be able to wait a few years to accompany then a steak of doe, venison, whose texture of the meat will recall the delicacy of its tannins or another pigeon in ballotine, roast poultry.

Winemaking : Harvest destemmed at 80%, vinified in temperature-controlled stainless steel vats, punching down and pumping over then malolactic fermentation in 4hl barrels.

Breeding : In barrels for 18 months.

Wine aging  : From 1 to 15 years old.
